The double cheeseburger is part of Chef Roy's heritage and his homage to the burger stands in Inglewood, Hawthorne, Compton, Lawndale, Lenox, Gardena and South LA owned by Koreans. With his salt-and-peppered thin, short order grill style patties, he honors the iron gated burger stands and stays true to the flavors of a more hidden LA. His nod to his French training as a chef can be felt and tasted in the pat of Plugra butter and the toasted brioche bun. The slow-roasted tomato confit is in the vein of Provence. Pickled red onion and butter lettuce add a snap to it while the sesame leaf and sesame mayo round it out. A single splash of Tapatio is his wink to keeping this burger "west side til I die."
